In 1996, third-generation dairy farmer Tim Pedrozo and his wife Jill bought a small herd of Holstein and Jersey Cows. Their hope was to allow their animals to graze outdoors on the variety of grasses that grew in their pastures. Over the next two years, it became clear that sustaining a farm on fluid milk production was too great a burden. Packing up their family and herd of 50 cows, the Pedrozos bought a farm in the Sacramento Valley town of Orland and opened Pedrozo Dairy & Cheese Company.

Learning to make Old World-style cheese from the former owner, they set out on their new endeavor. Over the years the Pedrozos have developed their own style, and their cheeses are true California originals. Their commitment to sustainable agriculture and responsible stewardship remains strong. Their cows have year-round access to the outdoors and graze on natural grasses while the pastures are in bloom. The natural diet and health of their cows and comes through in the robust flavors of their raw milk cheeses.

Tom Pedrozo is a fourth-generation dairy farmer and second-generation cheesemaker. He is proud to carry on the traditions of Pedrozo cheesemaking into the next generation.

Northern Gold

cheeseNorthern Gold is where it all began. The buttery original. The name comes from the lovely golden color of the cheese, and the flavors are smooth and nutty. A perfect snacking cheese. Enjoy it sliced on a sandwich, melted on a burger or shredded in a salad. It's also a real treat to enjoy slices along with your favorite full-bodied microbrew.

Black Butte Reserve

cheeseBlack Butte Reserve is a premium cheese, aged at least six months and made only during spring when the grasses are lush. The creamy, robust cheese boasts flavors that are sharp and grassy. A creamy texture makes it particularly delicious for fondue and macaroni and cheese. It pairs quite nicely with a meaty red wine and also goes well with port, which brings out caramel notes in the cheese.

Blondie's Best

cheeseBlondie's Best is named after the cow who made our very first batch of cheese. The resulting product was mild, slightly sweet and tangy. We still make this cheese today and are happy to offer it in a two-pound wheel.

Tipsy Cow

cheeseTipsy Cow is washed in Mount Tehama's Petite Sirah which imparts a fruity spice to the cheese and a lovely purple color to the rind. Available as a two-pound wheel.

Stout Cow
