Ellsworth Cooperative Creamery, located in Ellsworth, Wisconsin, is known as the Cheese Curd Capital. Their cooperative is 300 dairy farm families strong, and these farm families are more than the producers of their milk, they're the owners of the organization and have a deep and profound interest in its success and producing products of the highest quality.
The Ellsworth Cooperative consists of three production facilities. The one in Ellsworth, Wisconsin, specializes solely in the production of their world-famous All-Natural White Cheddar Cheese Curds and All-Natural Cheddar Cheese Curd Crumbles. They accept only farmer-certified rBST-free milk from which they produce about 160,000 pounds of 100% All-Natural Premium Cheddar Cheese Curds daily. The facility in Menomonie, Wisconsin, manufacturers over 80 varieties of small-batch artisan cheeses, including their award-winning Red Rind Muenster, Wisconsin Brick, and Hot Pepper Jack varieties. Their Wohlt Creamery facility, in New London, WI, specializes in process cheese products servicing the needs of foodservice, retail deli, and food manufacturers.
In 2018, Wohlt Creamery, in New London, WI, joined our family. The New London location represents a 60-year cheese-making tradition. Specializing in process cheese products, quality and innovation are woven into the culture. Servicing the needs of foodservice, retail deli, and food manufacturers, customization is our specialty.
Meet the Cheesemaker
Joe Hines, prior Senior Specialist, was with Ellsworth Cooperative Creamery for over 50 years. Joe started with the Creamery back in 1966 at the age of 18. Since first joining the Creamery, Joe worked his way through the ranks, eventually earning his cheesemaker's license and becoming Cheese Superintendent, a role he held for 20 years before transitioning into his final role (Senior Specialist). "It's been a pleasure working with the CEOs over the years, the office staff and all the employees, and the farmers," says Joe. "They are my bread and butter and without them, I wouldn't be where I am today."

Ellsworth Natural White Cheddar Cheese Curds
From the Cheese Curd Capital of Wisconsin, Ellsworth Cooperative Creamery Natural White Cheddar Cheese Curds taste like no other because they are crafted with only rBST free milk from our 450 family farms throughout Wisconsin and Minnesota. Ellsworth has a unique packaging process, which produces the freshest tasting curds. The oxygen is taken out of the bags, yet the cheese remains loosely packaged. The longer the cheese remains inside the sealed/unopened package, the more enriched the cheddar flavor becomes. The health-conscious consumer will appreciate they are crafted using the highest quality farm-certified rBST-free milk. They are also high in calcium and protein, contain no added sugars, no carbs, zero trans fats, and are gluten-free.
