Specialty Cheese Company’s focus is in manufacturing specialty cheeses from around the world! In 1991, they purchased five old cheese factories dating back to the 1860s. As the years went by, they outgrew these old factories. In 2003, Specialty Cheese purchased a local high school and converted it into a cheese factory. Since then, they have modernized and expanded. Today, a visitor will enter “the Principal’s office,” pass through the gym, watch cheese being packaged in the old “Earth Science” classrooms and see hand-painted murals still decorating hallways.

In 1996, they introduced a patented line of cheese snacks called Just the Cheese®. These snacks are crunchy and delicious and highly popular with consumers who follow low-carb diets. Since 1991, their highly skilled team has developed authentic and innovative cheeses and tripled their employment. The success of Specialty Cheese is built on superior product quality, innovation, and helping their employees grow.

Cotija

Nicknamed “the Parmesan of Mexico,” this style of cheese originates with artisanal cheese makers high in the mountains of Michoacán, Mexico. Cotija is a hard, crumbly cheese that makes for an excellent salty snack, but its true place to shine is as the finishing touch to almost all traditional Mexican fare; think of it as more of a seasoning than a cheese. Its distinct ivory color and fine texture add complexity and contrast to simple anteojitos (sides) like refried beans or salads and are the necessary garnish for everything from enchiladas to tostadas.

Paneer

The most popular cheese of the Indian Subcontinent (India, Bangladesh, Nepal, and Pakistan) is undoubtedly Paneer. This unique fresh cheese is similar to farmer’s cheese, the main difference being that Paneer is not salted. This difference gives the cheese its signature clean and mild flavor that has allowed it to feature prominently in dishes from all over the Indian Subcontinent. It is an extremely versatile cheese, being used in both traditional desserts like Sandesh or savory curries like Mattar (curried peas) or Palak (creamy, spiced spinach) Paneer. Paneer is a semi-soft cheese that never melts, and its high protein content makes it an amazing vegetarian substitution.
