The Uplands Cheese dairy farm sits up on top of Pleasant Ridge, in the Driftless region of southwestern Wisconsin. The farm spans 300 hilly acres, all of which are pasture, segregated into small paddocks. Each day they move the cows to a different paddock, which ensures two things. First, that the cows are always eating fresh grass and will thus produce healthy, flavorful milk. And second, that the pasture isn't overgrazed and will re-grow in time for the next grazing. Uplands milks their cows seasonally, in time with the pastures, and make two traditional, artisan cheeses - Pleasant Ridge Reserve and Rush Creek Reserve.

Andy Hatch was born in Wisconsin and studied Dairy Science at the University of Wisconsin, where he apprenticed under Master Cheesemaker Gary Grossen.  After apprenticing in Norway, France, Italy, and England, Andy returned to Wisconsin to run and eventually purchase Uplands Cheese, a dairy farm in Dodgeville where he now lives, milks cows, and makes two cheeses - Pleasant Ridge Reserve and Rush Creek Reserve.

Rush Creek Reserve

Made only in the autumn, as the diet of the cows begins to change from the fresh pastures of summer to the winter's dry hay. Rush Creek Reserve is designed to show off the richer texture of our hay-fed milk and the delicate ripeness of a soft, young cheese.

Pleasant Ridge Reserve

Pleasant Ridge Reserve is an aged cheese with a firm toothsome texture.  The notes are savory often of roasted nuts, bouillon, and malty sweetness.

Pleasant Ridge Reserve is the most-awarded cheese in American history. It is the only cheese to have won Best of Show three times, and the only cheese to have ever won both of the major, national cheese competitions.
